Mel Haynes - Distiller
With a career as a chef with a keen interest in foraging, diet and plants together with an education in biochemistry, Mel’s interest in aromas, flavours, botanicals propelled her into the distillation world 5 years ago. After mastering fermentation, distillation processes and many Gin trials & tastings many thirsty friends urged her to start a micro distillery …. “Sometime Soon” she replied and this become the working title of her label. With daunting red tape required and a busy calendar Sometime Soon became a little longer.
Andrew Klima - Business Manager
A youth spent on the coast in NSW & Queensland led Andrew to working in a sugar mill where the tonnes of canes yielded bright white sugar, black molasses and a lovely byproduct from a local distillery – Rum ! With a taste for rum firmly implanted in his soul, Andrew travelled globally before being drawn to settle in Adelaide’s East End over 10 years ago. In the midst of the lifestyle, atmosphere, fun and frivolity Andrew considered opening a bar or a club to share his love of spirits.
After a trip to the Caribbean in 2019, Andrew realised that no one was making the rum style he liked to drink in Australia – funky, full bodied pot distilled rums of interest and intrigue.
The drive to start a distillery began and being great at working through regulation and process, Andrew has established East End’s first distilling business since Milne & Co. Distillers were established on Grenfell St.
